Class Details

Take a step further into the art of breadmaking and discover more about the processes that create different flavours and textures. You will learn all about Sourdoughs and preferments. During this hands-on course you will make Wheat & Rye Sourdough, Wheat Sourdough, Stilton & Raisin Loaf and learn how to make the award winning Church Street Sourdough.

We will demistify the sourdough process to enable you to continue making this style of bread at home.

Naturally you will take these home to share with your friends and family.

You will receive information about prefermented breads and how to start and preserve a sour culture. You will also take home the recipes to repeat this at home.

It is not necessary to have attended our Masterclass in Breadmaking beforehand.

Food and wine are provded during the course.

    A great experience that not only provides hands on experience of proper breadmaking, but also provides the understanding to make sense of it. You don’t need to be super advanced to benefit from and enjoy the course. If you have made some bread and are reasonably familiar with handling dough you should cope.

    That’s not to say it’s pitched at a low level. Paul is a great communicator and makes it easy to understand, but you get to make some seriously good, top class bread and the clear recipes you take away enable you to go back over what you did. It’s a packed session but very good fun, and 5 hours flew by.

    I have nothing but positives to say about the Sourdough Masterclass. A really well structured course with lots of practical experience, backed up by the necessary information and advice presented in a comprehensible manner. Paul’s enthusiasm for breadmaking is infectious and he has a gift for turning complex theory into clear and simple explanations. The course was full-on and we got through a huge amount in the five and a half hours. But the atmosphere throughout was friendly and encouraging (and the mid-evening buffet was delicious!) We left with two very full bags of various delicious breads, all of which we’d had a hand in making, a pack of recipes and instructions to remind us of what we’d learnt and an eagerness to get started on sourdough breadmaking ourselves.

    My best birthday present ever.
