This cake flour has been heat treated to allow it to absorb more liquids, often referred to as high ratio flour. Use this in replacement of plain flour in your cakes at home to help reduce the possibility of delicate cakes collapsing or if using fresh fruits in your batter such as banana, raspberries, carrots etc.
